How to Make Green Tea Ice Cream
Green tea ice cream is a popular Japanese dessert. This ice cream flavor comes from Matcha, a Japanese ceremonial tea variety. The Matcha gives the green tea ice cream its characteristic intense taste. It will also carry Matcha’s delicate essence. What really makes it special, though, is the vivid green color.
How to make green tea ice cream at home?
It is made like any other ice cream. You start with making a thick custard. All you need is a cup of whole milk and double that of heavy cream, three-quarter cup sugar and 6 egg yolks. And, of course, you need 4 teaspoons Matcha. You can find Matcha in tea shops that sell Japanese products or you can look for it in Asian specialty stores. You can even order it online.
- Dissolve the Matcha in a little boiled water and set aside.
- Warm the milk, cream, sugar in a saucepan. Add a pinch of salt. Pour the cream in a large bowl.
- Whisk the egg yolks in another bowl. Pour in the warm milk slowly while whisking constantly. Now pour this mix back into the saucepan. At this point keep an ice bath ready. Just pour ice into a wide pan so that it still has the space to take the cream bowl.
- Put the saucepan on medium heat. Keep whisking briskly with a spatula. Make sure you scrape the bottom as you go. Keep doing this till the mix is thick and you have custard. You will know it is done when it covers the spatula in a thick layer.
- Now put a strainer on top of the cream bowl. Add the now cooled Matcha tea. Pour in the custard and whisk vigorously. The green tea will give this a lovely vivid green color. Put this in the ice bath and keep whisking till it cools.
- Now pour this mixture in your ice-maker and freeze according to manufacturer’s instructions. Alternatively, you can just pour it in a sturdy plastic container and freeze it. Take it out a few times and stir it to avoid the formation of crystals.
Green tea ice cream is the perfect dessert for any Japanese-theme party. However, really, you do not need an excuse to indulge in this delicately flavored ice cream. Best of all, few things can beat the vibrantly colored dessert on your dining table.
